Earthy Beetroot Soup

While looking at ways to improve my running I can across was some studies into the use of beetroot juice as a natural performance enhancer. It works as it has a high nitrate content which dilates blood vessels which increases the flow of oxygen to the cells which in turn increases the power available to the muscles and the length of time the muscles can exercise without fatigue. Evidence showed that beet juice increases exercise performance by a whopping 16%. It’s also worth noting that benefits were also found in people who found everyday exercise, such as walking, challenging.

So with this in mind I’ve had a little play in the kitchen and ended up making a great soup which the whole family enjoyed.

Beetroot & Cumin Soup 
1 tbsp Cumin Seeds
1 tsp Coconut Oil (can use butter or olive oil)
1 Onion
900g Raw Beetroot, peeled and grated
600ml Vegetable Stock
Salt & Pepper
Natural Yogurt (or Greek Yogurt) to serve

Dry fry cumin seeds in a pan for 1 minute. Take out and set aside.
Add the coconut oil and onion and leave on a low heat for 10 minutes until soft.
Add the beetroot and half of the cumin seeds and sauté for 5 minutes.
Add the stock and bring to the boil. Reduce the heat and simmer for 20 minutes.
Blend until smooth in a food processor. Season with salt & pepper.
Portion the soup and serve with a tablespoon of yogurt and a sprinkling of the reserved cumin seeds.
